Sauerkraut soup with a touch of Lindemans

Ingredients
500 g sauerkraut (plain)
1 onion
2 bottles Lindemans Gueuze
4 juniper berries
300 ml vegetable stock
2 tbsp butter
pepper
a few dried bacon slices

Directions

Peel and finely cut the onion and gently fry it in the butter.

Add the sauerkraut, the Lindemans Geuze and the vegetable stock.

Crush and add the juniper berries.

Allow to simmer over low heat for 15 minutes.

Taste it and season with pepper if needed.

Serve the soup with dried bacon slices.
